So yesterday, I sold my car...  
As an incentive, I offered to bake a batch of vegan cupcakes for the lucky purchaser.

It just so happened that the person who responded to the post I made about it on [info]damnportlanders is the wife of one of my husbands co-workers. They ended up buying the car, and last night I made a batch of vegan cupcakes for my husband to bring to work with him, to give to his co-worker to bring home.

This one.. well..

It "didn't fit" in the container, so.. I had to keep it. What can I say?



Its Cherry almond flavoured. I loves it. Last night after I made the icing, Aaron licked the beaters because he liked the flavour so much. Best thing, its completely vegan, and oh so tasty.

Today is another super hot day here in the Northwest, and tomorrow is looking like it will be even hotter. For the next week or so, I'll probably post mostly no-bake or low-bake goodies and foods, simply because turning on the oven is nearly painful with all the heat in the house.

that looks so delicious! I don't think I've ever had vegan anything let alone a dessert. =P

The awesome thing about vegan baked goods is that you can actually taste the flavouring, so pure vanilla and pure almond extract really stand out, and aren't masked by the flavour of the butter or the eggs in regular baked goods.

It really produces a cleaner tasting baked good. Even myself, a devout butterlover, I have to admit I like the flavour of most vegan goodies I've tasted, even over the flavour of some non-vegan goodies.

Some vegan food is pretty good, too. I'm kinda picky when it comes to vegetables, so.. its not a good lifestyle for me. If you're interested in vegan cuisine, I recommend reading www.havecakewilltravel.com as well as many of the blogs she has on her link list.

She's got some damn good photos too.

Awhile ago, I could've sworn you had posted a delicious looking recipe for oatmeal jam squares...however now that I've finally got enough time to make them I can't seem to find the recipe on your blog or journal! =(
Am I just going crazy, or did this recipe actually exist?

Ooh, The jam square recipe does exist! Its hidden in the depths of my recipe journal though, so here's a link. Warning, the smell created by this recipe baking in your oven is enough to make you drool, writhe and lose your patience for it to cool off before digging in (seriously, its the most amazing smell on the planet), but if you don't let it completely cool before cutting into it, it will be ruined.

cherry almond is my favorite flavor that's not chocolate =)

That is the most perfect cake in the world! It's so pretty I wouldn't be able to eat it.. well, I'm sure I'd get over it, but you know..

It's very hot here too. I just want to lie on the floor and not get up again. :)
