Lime Jello Sherbet- The impatient cook's best bet for a tasty treat.  
So last night, I couldn't sleep. I thought of maybe making cupcakes or bread, or something that required the use of the oven, because really, it cools off quite a bit at night, and the heat would have just blended in with the daytime temperature.

I sat down by my cookbook shelf, and looked through all my neglected cookbooks. So many neglected cookbooks. I'll fully admit, I'm a compulsive cookbook purchaser. I'm mostly attracted to niche cookbooks- cookbooks that have some sort of hook, or theme- Something different than the typical betty crocker bible. Also, I LOVE the kind that have a photo for every recipe. Then there are the kind that I rarely open, but have plenty of. Brand cookbooks.  I don't usually buy them, but my mom does. Then she passes them on to me, and being the kind of girl who can't let a cookbook go without a home, I take them in and let them live amongst the rest of my cookbooks.

Some of them are so simple, they're not even recipes. Putting coolwhip and chocolate pudding together in a pre-made graham cracker crust (thank you- keebler) isn't a recipe. Its assembly.

But some of them are pretty darn cool. Like this Jello recipe book that I've been harboring for the past few years.



Its as old as I am, having been printed in 1981, so I feel a sort of kinship with it.

also, I happen to think the price tag on the front is HILARious..


You know, because.. well, we all know what gelatin is made of, right?

Anyways, so this book has some pretty nifty recipes in it. Sure, It was made in the 80's, so as expected, there are more Jello salad recipes than you could expect to see at a church potluck in Utah, but still, if you think of it as more of an idea book, its very helpful. I mean, everything you could ever hope to learn about jello, can be found within its pages. I never thought about making Jello marshamallows, but really, marshamallows are made with gelatin, so it makes sense! It tells about making moist cakes with it, how to add fruit to it, how to make different textures (whipped, flaked, cubed, cutout, tilted, layered) and a lot more.

My favourite thing about it, is that while most of the "recipes" are more like the assembly directions you'd find in most brand cookbooks, These are way more creative.

A few ingredients that most people have around their house, no fancy equipment, and best of all, It only takes a few hours to make it, and then overnight in the fridge for it to be finished!  I should know, I made mine between Midnight and 4:30AM this morning.

Needless to say, I'm pretty impressed with this simple recipe. I'm pretty impressed with my Jello cookbooks too. I've got two different ones, "The joys of Jello", and "Easy homemade desserts with Jello pudding", Which, obviously, focuses on Jello pudding, rather than Jello Gelatin. (It also is three years older, and has more real recipes, AND it holds the coveted Jello Pudding pop recipe from my childhood)

I'm thinking I'll be doing more Jello recipes this summer. There is very little heat involved with most of them, and the bright colours really make it feel like summer.

That sherbert looks delicious. I have the same cookbook in an earlier edition - late 60ish. I collect cookbooks from that era - love the awful early color photography!

Weird huh? I always thought frozen jello would be.. chewy. Hehe.. this actually tastes just like the store bought sherbet, which is weird. I'm thinking next time I make it I may add some real lime juice, and see what happens, It just lacks that little pucker that real lime juice gives.

Oh my, that actually makes Jello look delicious!

*wonders idly if there is some form of Jello without nasty things in it that don't fit my dietary guidelines*

Must be something *someone's* great-great-great-great-great grandmother would be able to recognize, ie no HFCS, soy lecithin, partially hydrogenated whatsis, etc. (You gotta go back kinda far since Velveeta and such have been around a while now!)

I suspect I'd need to make my own from scratch since that's the case with many prepared things. Come to think of it, that wouldn't be such a bad idea in the summer...give me a mix up from my beloved ice cream!

Oh yeah, and you have totally just gotten me to grab some lychees from Whole Foods. It was the fruit cups that threw me over the edge :-D

haha.. YAY LYCHEES! I'm totally thinking I need to start a pro-lychee coalition. I'll make a graphic to go along with it. It'll be something like, "Americans for the furtherance of lychees in its non-native countries" and there will be an American flag watermark in the background, like something you'd find in KGW's overused graphic department.

Making your own jello is a great idea. You can even make it vegetarian, by using Agar (seaweed) powder instead of gelatin. Its really good, too.

P.S. Velveeta frightens me. Its like the cheese of the undead. I had a box of it in my refrigerator for like, 2 years, and it was still moldless. Not even mold want to eat pasturized processed cheese food. blecch..

I'm actually good with gelatin, it's good for hair! (and well, you know me and my hair lol)

I think cartoon lychees would be adorable...in fact I think I've seen some recently. *searches* Dang, it's out there somewhere I swear, probably saw it on [info]craftgrrl in case someone recalls it.

Isn't it though? I swear most people think I'm insane when I laugh at things like that. Everyone keeps telling me to take it off because it looks tacky, and I think it adds to the humor of jello. hehe..

i'm also really curious, what do you have to change about pudding to make pudding pops? i loved pudding pops but the ingredient list totally grosses me out.

Of course!

Most of these recipes will come straight from these jello books, neither of which are in print anymore. I've been advised that as long as I credit the book for the recipe (and specify Kraft products), I'm free to post them, because Kraft encourages brand advertising via recipe.

Really, there isn't much to change about pudding to make pudding pops, other than a different milk to mix ratio. I'm probably going to offer the "from scratch" pudding pop recipe as well, not using Jello products.

Oh man... I seriously just bought a freaking buttload of jello (both gelatin and puddings, because they were on sale), so I hope you post a whole lot more jello recipies!

May I go cry now? That's exactly what I was looking for, except in orange, but we don't have Cool Whip here :'( I'd try to use whipped cream instead, but I can't have whipped cream *sniffle*

It would appear I am forever doomed to having to travel 45 mins to get a scoop of orange sherbet since the shops don't sell it in tubs and the nearest place that sells in on cones or in scoops is 45 mins away.

On a lighter note though, that looks absolutely yummy! :D

So I just tried to make this using raspberry Jello mix but didn't realize that my pans are the kind where the bottom comes out and now there is red goo all over my freezer. :(

Hey! This is probably going to seem really random but you posted your strawberry pie recipe back in May, I think, and I finally got around to making it on the 4th of July. My husband's grandma says he was the best pie she's ever had and she said, "I'm 83 years old! I know my pies! They called me 'Pie Face' as a kid because I ate so many!" So just wanted to let you know that you're my inspiration!

Chocolate pudding pops were awesome! Also, I was born in 1981 as well. Yay for made in the 80s! Also, my parents had a Chrysler Plymouth Reliant station wagon too. It was silver, and broke down all the freaking time. Something about vapor-lock, and gas in the line.
