so awesome! how did you make the icing? I really wanna make cupcakes for valentines day.
Adventures in culinary creativity.[info]a_muffin_story on January 27th, 2007 12:16 am (UTC)
I actually didnt use a recipe, but I can share with you how I make the icing!

Put Half a stick of butter and half a block of cream cheese in a high powered stand mixer until completely broken down and creamy.

add enough powdered sugar, usually about 2 or 3 cups, a little at a time until you start to notice the cream cheese/butter mixture taking on a matte sort of finish and thicken up. at this point you can add your flavourings. any sort of liquid added at this time will loosen up the paste into a more workable frosting mixture. You can use fruit juices or extracts. For a generic flavoured icing, I'll use half almond and half vanilla. It tastes SO GOOD. But you can make it citrusy or berry flavoured.. even grape. Ha. I've got a strange collection of extracts over here. If you're looking for a strange flavour, a lot of the time you can buy them at stores that sell candy making supplies. OR, you can use things like seedless grape jelly or fruit juice concentrates.

If the liquid loosens up the mixture too much, then just add more powdered sugar. If you're happy with the flavour, and you think it's too thick, add some heavy cream or whole milk. You could even use 2%, but I wouldnt use skim, which is just like adding water. ew.

Good luck! This is the way my family has been making icing for years. Its SO easy.

Another thing, its best to use food colouring paste, if you decide to use arteficial colouring. The colour doesnt thin out the frosting AND it doesnt separate like liquid colourings do.

Is another icing recipe that works really well. Especially if you want the icing to be lighter and fluffy, since the one I use is more dense and sugary.

how do you flavour your icing?

i cannot WAIT for icons of these (i don't use icons with text, though, so here's hoping for some text-less ones. hehe)
Adventures in culinary creativity.[info]a_muffin_story on January 27th, 2007 12:22 am (UTC)
I use mostly candy flavouring extracts. I used to work at a bakery, so I buy mine from the supplier. You can find some pretty strange flavouring extracts at stores that sell candy making supplies, even a store like michaels or hobby lobby or whatever sort of craft stores you have where you're from. If they have a Wilton section, they should have candy flavourings. For more unusual flavourings (lychee, goji berry, red currant, grape, pinapple, stuff like that) I make a simple syrup by boiling down strained fresh fruit juice and sugar until it thickens. Then I use a merengue frosting recipe like this one- http://www.cooks.com/rec/doc/0,176,146163-239203,00.html

only I use the juice as if it was the water, and I dont add any extra flavouring extracts.

Its a lot of fun! hehe..

Omg I see you over at flickr. These are so cute but my 7 yr olds have seen the ninjas and they want them. Would you mind telling me where you got them? You are so talented by the way.
Adventures in culinary creativity.[info]a_muffin_story on January 29th, 2007 01:45 am (UTC)
I got them by playing ticket games at an arcade.. BUT!
an extensive google search (just for you!) revealed their hiding place over at oriental trading company!

http://tinyurl.com/3b8cgu

sneaky little ninjas, hiding away from us.

Yeah, now that I know where to purchase them I'm going to buy some more too. I already have a bag of 'em, but I need more for another photo project I'm working on.

Good luck!
